2 lbs. boneless pork loin roast
½ cup red apple balsamic vinegar
1/3 cup organic garlic olive oil
2 tsp. rosemary, dried
4 garlic cloves,
minced
Salt and pepper
Season pork generously with salt and pepper and place in a
sealable bag. Add the balsamic vinegar, olive oil, rosemary and garlic to the
bag. Place pork loin in refrigerator and let marinate overnight.
Preheat oven to 350 degrees. Remove pork loin from sealable
bag and place on a roasting pan. Drizzle leftover marinade from bag over pork
loin. Place roasting pan in oven and cook about 60 minutes or until meat
thermometer, inserted in center of pork reads 145 degrees.
Remove pork loin from pan and let rest for 10 minutes before
cutting.
