Onion & Cilantro Acorn Squash



3 tbsp Roasted Onion & Cilantro Olive Oil
2 tsp Salt
2 tsp Pepper
1/4 c grated Asiago or Parmesan Cheese

2 tbsp Fig Balsamic Vinegar


Preheat oven to 400 degrees. Wash acorn squash and cut in half. Scoop out seeds and strings. Thinly slice squash and arrange in single layer on baking pan. Brush both sides of squash slices with olive oil. Sprinkle salt, pepper, and cheese over slices. Bake for 20 minutes or until tender.


Remove slices from oven and arrange on serving tray. Sprinkle Fig vinegar over slices.
