Shrimp with roasted tomatoes & feta



6 roma tomatoes, quartered
Lemon Olive Oil
3 cloves garlic, minced
1 lb shrimp, peeled and deveined
1/4 cup fresh parsley, chopped
2 tbsp fresh lemon juice
4 oz feta cheese


Preheat oven to 450 degrees. Place tomatoes in a large baking dish and drizzle the olive oil and garlic over the tomatoes. Season tomatoes with salt and pepper and roast for 20-30 minutes. Remove baking dish from oven and stir in the shrimp, parsley, lemon juice and feta cheese. Return baking dish to oven for approximately 15 minutes, or until shrimp has thoroughly cooked. Serve immediately.
